Lunch on a Budget

Author : teriann

Ever stopped to check how much we spend on our lunches?  Recently I racked up a bill of $7000.00 in just one month.  I was shocked to see how much I had spent.  To make matters worse the food was neither nutritious nor tasty.  So I am going to carry my lunch to work.  I have a few ideas.

Pigs in a blanket (my Jamaican version) This is made by putting a mixture of sausage and onions into sweet rolls.

Stuffed fried dumpling. This is delicious, just make dumplings and then stuff with leftover meat and vegetables before frying them.

What ideas can you share for a quick lunch? I can’t wait to hear your suggestions.

  1. Interesting and informative. But will you write about this one more?

I used to spend a lot on lunch, but after recently getting married… I found that saving every bit counts. This may not work for all, but i try to cook extra for dinner to carry for lunch, for instance on a Sunday – I cook extra just to have enough lunch for Monday. Also i have found that a simple box of mac & cheese can go a long way. Just mix it with anything really (you can’t go wrong). From left over chicken to canned tuna or corned beef. Salads work well too with leftover meats.

Excellent ideas, leftovers are truly a girl’s best friend,or this case a wife’s best friend. Thanks for your suggestions.
